We offer
traditional hearth-baked breads. Our organic grains are
ground on millstones to our specifications.
Our breads are slowly fermented and shaped by hand to
fully develop their unique flavours.

Facts about our organic products
Lots of people is now looking for bread,
pastry, cakes and other products which are yeast free,
dairy free, gluten free, chemical and gm free. Among many
organic products, Britt's Organic make a spelt sourdough bread which only contains Celtic
salt, spelt flour, water and sourdough. A richly flavoured
densely textured bread, which has become an old time
favourite.
Ingredients used in other organic products are unbleached
white flour, wholemeal spelt flour, kibbled rye, dark true
malt, organic fresh eggs, organic sugar, sea salt and 100%
No Hydrogenated Palm Oil, to name a few. Our organic products
are now widely
distributed throughout the eastern seaboard of Australia.
Why Organic
Organic agriculture is a carefully designed system of food
production which operates internationally to written
standards. It aims to grow the best food possible by
understanding and working with natural processes. Good
health – of the soil, plants, animals and people – is the
objective. So soil fertility is preserved and enhanced by
the use of composts, green manures and crop rotations
rather than by fossil-based soluble fertilisers which take
large amounts of energy to produce and which can damage
soil micro-organisms as well as polluting drinking
Not surprisingly, many
people find that food grown organically tastes better. It
avoids the pesticide residues that are often present in
non-organic food and on average, it contains higher levels
of vitamin C and essential minerals such as calcium,
magnesium, iron and chromium as well as cancer-fighting
antioxidants. Conventional food processing uses hundreds
of additives and ‘processing aids’, some of which are not
even mentioned on product labels. But organic food allows
only a handful of additives: the only ones used by Britt's
Bakery are baking powders in some cakes.
All in
all, choosing organic food means opting for health – your
own and that of all parts of the biosphere in which we
live and on which we depend. If you care about where your
food comes from and what it does for you, organic is
the natural choice. |

Yeast facts
Our
organic breads are leavened with sourdough culture.
Traditional sourdough culture is a simple mix of flour and
water that has been allowed to ferment in a controlled
way, thus making the bread easier to digest. This
process produces a diverse mix of wild organisms,
predominately lacto bacteria and wild yeasts. The effects of these
wild organisms in the sourdough culture is very different
from that of normal yeast, as they are part of a
miniature ecosystem. The difference between normal yeast
and the wild yeast within a sourdough culture, is similar
to the difference between refined white sugar and the
complex sugar within an apple.

Spelt facts
Spelt is an amazing grain that is being rediscovered
by Australian consumers. Popular in
Europe for centuries, spelt is used in a wide variety of
cereals, bread, pastas and beers. The
ancient Romans knew it as farrum, Italians call
it farro and Germans know it as dinkle.
Spelt has been used successfully as a wheat substitute for people who have
wheat allergies. Once commonly grown in Australia, spelt
was replaced at the beginning of this century by modern
wheat varieties, which are more suited to the high volume production techniques currently used on most Australian
farms. The nutty and flavourful spelt taste has
proven to be an attractive alternative to the common
varieties of wheat. Spelt products are nutritious, versatile, and very
tasty. Whether or not you have wheat allergies, your first
taste of our spelt products will bring you back for more.

How long will our
organic products stay fresh?
All our products are baked fresh daily and
specially packaged to preserve freshness. Once you receive
your order, products stay fresh for 5 to 7 days and will
keep in the freezer for up to1 year. Our products are safe
to freeze and refreeze.
